Word of Wisdom Living + Egg-in-a-Hole

I thought I'd share one of my most favorite blogs about healthy living, WordofWisdomLiving.com. I can't say enough good things about this blog. It is AWESOME! The author dedicates his time to researching and writing about health, incorporating scriptural principles found in the Word of Wisdom, but also modern science about nutrition. He includes healthy recipes, tips to improve your overall health, and also lists 52 healthy changes you can make - one each week of the year - to transform your lifestyle into a balanced and healthy one. One of the little things I've learned that has been SO helpful to me, and which I refer to almost every time I'm at the grocery store, is that in all grain products (bread, cereal, crackers, pasta, etc) you should look for the ones that have more grams of natural fiber than grams of sugar. By following this simple rule of thumb, you'll ensure that you're always eating whole grains.

I used to painstakingly read the label, looking for buzz words like "enriched"or "bleached" to find out if the bread I was buying was whole grain or not (many breads are packaged as "wheat" or even "whole wheat" but still have some white flour, and contain more sugar than fiber). Now all it takes is a quick peek at the nutrition label to compare fiber and sugar (they're conveniently placed right next to each other on the label). You will be shocked at how many products (especially cereal) do not pass this test. Here are the posts from WoWL on whole grainsbread and cereal.

That said, here is a fun little breakfast I like to make with whole grain bread. Egg-in-a-Hole!



1 slice 100% whole grain bread
1 egg
1 tsp olive oil
1 cup spinach
salt and pepper

Spray a pan with cooking spray and heat to medium. With your fingers, punch out a hole in the middle of the bread. Place on heated skillet, then crack the egg directly into the hole in the bread. Place the cut-out circle on the pan to toast as well. After a minute or two (depending on how you like your eggs), flip the toast and egg and cook the other side. Off to the side in the same pan, heat the olive oil and add the spinach, cooking just until wilted. Season both with salt and pepper. Serve the egg and toast with the spinach on the side or on top.
